Quebraditas Coffee Farm is a family project owned by Edinson, focused on producing specialty coffees with differentiated and replicable sensory profiles thanks to their fermentation processes, including various yeast inoculations. Additionally, they employ agronomic management focused on soil care (strategic shading, use of organic matter, pH maintenance through amendments and lime) to enhance the cup quality from cultivation.
They own 2 coffee farms situated between 1600 and 1850 meters above sea level, within the central mountain range. Within it grows a variety of exotic coffee varietals including this, stunning SL28 originally developed in the 1930s by Scott Agricultural Laboratories and popularized in Kenya. Here, that well known currant and berry acidity is elevated through yeast inoculation into notes of Cherries and Cacao. A Sister-Lot was used in the Hong Kong Brewers Cup 2025 Finals.

This specific lot was Fermented twice. To begin, an initial fermentation of 72 hours followed by a 12 day drying phase until the coffee reaches 20% humidity. It was then rehydrated for 4 days using a specific strain of yeast. It was then dried for 76 hours.
