Our First Decaf, is an innovatively decaffeinated by the 2005 Colombia Cup of Excellence winning farm, Los Nogales. After harvesting, the mucilage from the coffee cherries are removed, and washed. Unusually, the coffee beans are soaked in their own mucilage that has been fermented with Ethyl Acetate - a solvent often used to decaffeinate coffee - to remove caffeine while adding a complexity usually not observed in decafs.
A similar Decaffeinated Typica from Los Nogales was used to win the 2024 US Brewers Cup.
